Our Story
Born from Struggle. Built to Fuel the Run.
Noor de Sol was founded by Solomon, an Ethiopian-American Muslim revert, and his partner Sarah, a lifelong athlete navigating the daily realities of autoimmune disease.
Sarah has lived with Celiac Disease since the age of 4. But in late 2023, her health took a drastic turn. Persistent gut pain and inflammation disrupted her training, eventually leading to a rare diagnosis: Microscopic Colitis — an autoimmune condition that leaves the intestines in a constant state of distress.
Running — especially marathon training — became nearly impossible. Every store-bought gel triggered severe GI symptoms. In desperation, Sarah stopped using fuel entirely, pushing through 16- to 20-mile runs on nothing but water. The result? Relief from gut pain… but intense malnutrition.
Out of necessity, Solomon returned to his roots — drawing from his Ethiopian heritage and the wisdom of the Sunnah. He remembered the superfood that had nourished his ancestors and held a sacred place in Islamic tradition: dates. Simple, powerful, and easy on the gut, they had fueled generations through hardship and endurance. It wasn’t just a food — it was a signpost. The solution had been there all along.
Together, they began crafting endurance gels in their own kitchen using only real, whole ingredients. After dozens of test batches, they landed on a formula that worked — gentle on the gut, rich in carbs, and delicious. With Noor de Sol fueling her body, Sarah turned painful, broken runs into a Boston Marathon PR. More importantly, she felt nourished, strong, and steady again.
What began as a personal search for safe endurance fuel became a much bigger mission: To create clean, natural energy gels that support the gut, honor the body, and uplift the spirit — for all runners, and especially those navigating GI disorders, autoimmune issues, or faith-based food values.
Because no one should have to choose between their health and their performance.
